Terrou-Bi, Senegal’s iconic five-star seafront resort, is celebrating its 40th anniversary throughout 2026 with a series of initiatives, among them the Signature Menu 1986–2026, a six-course tasting experience unveiled at the reopened restaurant La Terrasse, the property’s seafront brasserie. Conceived by directors Kamil and Samir Rahal in collaboration with Executive Chef Anthony Jéhanno, the menu revisits the founding dishes of the House and reinterprets them with contemporary technique, a journey from the flavours of the original gastronomic restaurant to the vision that shapes Terrou-Bi today. Though the property is now an internationally recognised hotel, casino, and resort, the return to that founding address gives the anniversary its symbolic weight.

Four Decades of a Family Story
Terrou-Bi was founded in 1986 by Kalil Rahal and his wife Aïda, and named in homage to local fishermen with a phrase evoking “land on the horizon,” where the seafront restaurant grew over four decades into a landmark urban resort. Their sons Kamil and Samir joined the adventure over the years, expanding the Casino Terrou-Bi, modernising the gastronomic offering, and opening a luxury hotel in 2008. A third generation of the family is now involved, continuing a story that the anniversary menu deliberately honours.
Throughout its history, Terrou-Bi has remained a place guided by the spirit of Teranga, Senegalese hospitality rooted in welcome, humility, and respect. La Terrasse, the seafront brasserie that opened in 1996 and has since reopened for the anniversary year, is a fitting setting for the celebration.

The Inspiration Behind the Menu
The Signature Menu 1986–2026 draws directly from the gastronomic restaurant that marked Terrou-Bi’s early years, while embracing a more contemporary and expressive approach. It is anchored in the House’s history, reviving founding signatures and returning to the local produce that defined the restaurant’s earliest years, from the influence of French chef Michel Guérard on the founders’ early cooking to the sun-filled flavours of Senegal’s terroir.
Having taken over the kitchens of the family restaurant early in their careers, both shaped by their training in the South-West of France, Kamil and Samir Rahal worked with Chef Jéhanno and the current brigade to adapt those iconic recipes. The menu is a genuine transmission of savoir-faire, passed from the founding generation to the chefs who carry it forward: not a reproduction of the past, but a reinterpretation of it, with memory brought back to life through today’s techniques.

The anniversary arrives as Terrou-Bi enters a new phase of development, with the reopening of La Terrasse and the expansion of the property. - Amuse-Bouche: A delicate house-made fish rillette to awaken the palate.
- Marine Starter: Camerone in a crunchy green bean salad, lifted by a whole-grain mustard vinaigrette, an intense bisque, almonds, shallots, and a touch of tarragon.
- Fish Course: An exquisitely refined grouper, paired with a bold bissap-celery emulsion, a fresh apple-ginger julienne, and a tangy sorrel-lemon sauce.
- Meat Course: A tender beef fillet accompanied by artichoke worked in different textures, green pepper, toasted hazelnuts, and a full-bodied jus.
- First Dessert: A crisp minute mille-feuille filled with an airy diplomat cream and fresh red fruits.
- Final Note: A refreshing chilled mango and ginger soup, a vibrant nod to local flavours.
